Companies that sell air fryers claim that they are a more healthful option because they use less oil than traditional deep fryers, which is true. But since air fryers are a form of convection baking, these companies are comparing apples to oranges. To demonstrate, we tried cooking traditional buttermilk-battered chicken—which would normally be shallow or deep fried—in an air fryer, and the results were disastrous. The chicken was cooked through, but sections of the batter were overcooked, while other areas had globs of raw wet flour. The lesson here is that battered foods need to be submerged (or partially submerged and flipped) in oil for even browning and texture. The mediocre food we prepared in an air fryer only left us pining for real honest-to-goodness fried food made the old-fashioned way.
There is also present an exhaust fan just above the cooking chamber that provides that much needed flow of air from the lower portions of the oven underneath the food. This ensures that the heated air flows through your food and keeps your entire food at the right temperature. Thus, your food is cooked at a much faster rate than otherwise, due to the hot blast given out by the fan.
So how does this work? Well, the infrared heats up the food from the inside out whilst retaining internal moisture. You MUST work quickly and likely will have to do this in batches. Lightly spray a guacamole ball in olive oil to help them get “sticky,” then dip it in almond flour, then the egg mixture, then panko crumbs. Repeat ONLY until you have enough guacamole balls to fill the air fryer basket (while giving them ample space to breathe), then place the rest of the balls (without coating) back in the freezer.

The Avance didn’t outperform our top pick with homemade fries, but it was still significantly better than our other air fryers, which either overcooked the fries or didn’t brown them enough to have much of any texture or taste.
