Hi Helen–I would try oiling the basket of the fryer but brush it with regular oil and don’t use Pam. I didn’t have to do this with this chicken, but a good method for getting breading to stick to whatever you’re cooking is to make sure that the flour is almost like paste–which should happen here because of the buttermilk soak, but if you refrigerate the breaded pieces for about an hour, the breading will adhere. This is messy, I won’t lie, but it does work. Only other thing I can think of is you may have crowded the basket. Many people swear by the parchment rounds they sell to line the fryer basket. I bought them off Amazon but to be honest, I find them more trouble than they’re worth, but your mileage may vary.
Although it’s large even by toaster oven standards, it can truly replace your oven. No need for special toaster oven-sized cookware here. And Breville claims it can accommodate a 14-pound turkey. We do have one major quibble with this product. The manual contains no recommendations for what, how much, or how long to cook various foods. This may not be a problem for baking or roasting, but if you’re new to air frying, you’re on your own while getting started. Also keep in mind that all of the parts require handwashing.
SAVE YOUR MONEY! It does not last long and they don't stand behind their products for any longer than 60 days. I really loved it at first, and my daughters spent their money on me because I asked for the oven for Christmas last year. I asked for other products from this company for Christmas this year but told them not to waste their money. Buyer beware!

But since air fryers are a form of convection baking, these companies are comparing apples to oranges. To demonstrate, we tried cooking traditional buttermilk-battered chicken—which would normally be shallow or deep fried—in an air fryer, and the results were disastrous. The chicken was cooked through, but sections of the batter were overcooked, while other areas had globs of raw wet flour. The lesson here is that battered foods need to be submerged (or partially submerged and flipped) in oil for even browning and texture. The mediocre food we prepared in an air fryer only left us pining for real honest-to-goodness fried food made the old-fashioned way.
It is recommended to get a hot air frying device which has an auto shut off function and if possible an alert system when the cooking is done. This will keep you and the appliance safe from overheating and damage and will ensure that your food is not overcooked. An alert system will allow you to immediately proceed to serve the food after it is done
The chicken was not only crunchy on the outside, it was also tender and juicy on the inside. The subtle flavors of the wet dredge can be tasted in the crunchy crumb topping. I served these with a side of Ranch Dressing, but you could also serve these with honey mustard, barbecue sauce, or Polynesian Sauce. All are very good options for these lightly flavored chicken tenders.
