Cooking oils break down over time. Animal-based shortenings have very limited shelf life, as they do not react well with the outside air and become rancid. Vegetable oils also begin to separate into water and fat after several deep frying sessions. Replacing these cooking oils, especially in the quantities required for larger deep fryers, can become expensive and time-consuming.
The booklet sneakily recommended cooking a three-pounder, but I sensed trouble. Birds that small aren't easy to find at Safeway. Elisabeth checked at the grocery store near my house and after flipping through a bin of chickens, she couldn't find one smaller than 3.5 pounds. Considering it's an organic market and those birds tend to be smaller than the typical Oven Stuffer Roaster, this was disconcerting.
The air fryer is right on the coattails of the Instant Pot in terms of popularity with home cooks as an appliance that can “do it all.” So, what exactly is an air fryer? It’s essentially a compact convection oven that cooks your food at very high temperatures while circulating the dry air around with a built-in fan. It’s claim to fame is that it drastically reduces the amount of oil used during frying to achieve similarly crispy results. Given that these appliances can be quite pricey, I decided to test one out and see what all the hype was about. I tested with two variations of “fried chicken”— breaded and unbreaded. Both chicken variations were cooked in the air fryer and in a conventional convection oven. I wanted to find out if that hefty price tag was worthwhile, or if you should just stick to the oven.
The exhaust system also regulates temperature increases created by internal pressure by emitting extra air if needed. Before being released into the environment, the extra air goes through a filter which removes odors. Once your food is ready, the internal heating elements are cooled down with fresh air passed through these filters by the built-in cooling system.
This air-fryer riff on the Chinese takeout classic saves the day with nearly half the saturated fat of restaurant versions and loads less clean-up than deep frying at home. Air fryer sizes vary (hence the cook time’s wide range); if you have a smaller air fryer, commit to cooking in batches so that there’s plenty of room for the air to circulate and crisp up the chicken.
Air fryers are healthier, if not necessarily better tasting, than deep frying. Our testers noted the lack of grease across all the finished foods — especially in the chicken strips. I hated it the moment I got it. Which 7 appliances is this thing supposed to replace? The 6-Qt Elite is as small as my toaster and I can't bake biscuits in it! So, I call to get a return authorization, and they offer to reduce the cost by $30, when I say I don't want it, they offer to reduce the cost by $60. I say I just don't want it, do I send "free skillets" back with the oven? Nope, keep the skillets. Which by-the-way, I paid $14.99 shipping for, but okay, the skillets are nice. I went to Walmart and bought a beautiful Oster Digital Convection Countertop Oven for $99. I can bake biscuits and "air fry" my fries in it if I must "air fry" them!
So how does this work? Well, the infrared heats up the food from the inside out whilst retaining internal moisture. The halogen and convection part works similar to a halogen convection oven and uses a halogen lamp to produce heat which is then spread via a fan. It is therefore possible to cook food 3 times faster than a conventional oven. Now, the most important question, how does this technology combine to cook food?

I followed the Leah Chase's Oven-Fried Chicken recipe to test the second batch of chicken. After dredging, I brushed each piece of chicken with a light coat of olive oil in order to soak up the flour and prevent it from caking up and not “frying” correctly. I set the airfryer to 410°F for 30 minutes and preheat the oven at 425°F. However, 10 minutes into baking, the oven started to smoke really bad, so I turned the temperature down to 400°F. (I suspect the excess flour on the pan was burning.) Halfway through cooking, I flipped the chicken in both the oven and air fryer and noticed the bottom breading stuck to the basket in the air fryer, so I would definitely recommend spraying the basket with cooking spray. Naturally, the oven batch took 15 minutes longer (45 minutes total) to cook since I turned the temperature down. The air fryer chicken again cooked quicker, was crisper, and did not smoke up the kitchen. In fact, the air fryer batch was delightfully crispy and the breading was fully cooked through—no soggy bits to be seen. The drawback, again, was that it could only hold a few pieces of chicken. That said, though the oven batch may not have been quite a crisp in the breading, I will say, the flesh was much juicer.
While I was prepping the unbreaded chicken, I set the oven to preheat at 400°F, which brings me to one big perk for the air fryer: It requires not preheating. Typically, for oven “frying,” you want the oven at a very high temperature, thus heating up your kitchen. The air fryer saves you from an unbearably hot kitchen; however, it gives off a much louder noise than any oven when operating.
Okay, yes, the small appliance was invented as a way for French-fry maniacs in France (and the rest of Europe) to make fries in their small home kitchens. And sure, the air fryer does an exceptional job of crispifying vegetables and chicken wings alike, without vats of sizzling oil. But to think of the air fryer as a, well, fryer is to both sell it short, and set yourself up for disappointment.
If you’re OK with an air fryer taking up a lot of space, than the Philips XL comes with our recommendation. With a price exceeding the $200 mark, it is a fairly expensive piece of equipment but it does cook food to a very high standard and is well built and usable.
